awesome ravioli!

this is a meal that will feed at least 10 people.
that's about how big my family is.
note: its a lot easier to make ravioli if you have a noodle machine.

ingredients for noodle dough:
6 eggs
6 cups flour
1 tsp salt
a few tsp water (if needed)

Filling:
1 onion
2 lbs ground beef
salt and pepper to taste
22oz cottage cheese
10-12 leaves fresh basil
tsp dried oregano

Sauce:
2 cans hunts garlic&herb sauce
about 1 cup tomato juice
salt
oregano
Italian basil
fresh or can mushroom's

directions for noodle dough:
whisk eggs together add salt then add flour 1 cup at a time.
if dough is a bit dry add a little water.
dump dough on a flat surface and kneed for about 10 minuets.
then roll dough into a ball and wrap with plastic wrap.
set dough aside for about 30 minuets while you make the filling.

directions for filling:
cut up the onion put in a pan and fry it in some olive oil on medium heat.
once the onion is well cooked add the beef and cook that well.
season with salt and pepper.
once the meat is cooked add the cottage cheese and stir on low until it has melted.
chop basil finely and stir in then add oregano.
then shut off heat and put it by your noodle making station.

directions for sauce:
just put all the ingredients in a large sauce pan and cook on low heat until the noodles have finished cooking.

putting it all together:
first fill a big noodle pot with water on the stove and put on high to boil.
get out your noodle machine and flour it nicely(if you don't have a noodle machine then use a rolling pin and flour that too.)
roll your dough into thin rectangles with your noodle machine or rolling pin.
then spoon filling on one rectangle leaving space between each spoonful then put another rectangle of dough over the one with filling on it press down hard to get all the air out.
then cut with a ravioli cutter or just a regular knife.
when you have used all your dough put all the ravioli in the boiling water for about 5-7 minuets.
when there done scoop them out and into the sauce then cook for 5 minuet more.
then take them off the stove and serve with lettuce salad or coleslaw.
